As 2021 comes to an end and 2022 begins, new year’s resolutions are being made many of which are based on lifestyle choices. Whether you’re already vegan, if you’re trying to reduce meat consumption or aiming to be more sustainable in the next year Veganuary is a great way to do just that! Veganuary is a concept whereby through the month of January participants scrap the animal products and go plant based, every year it becomes more popular with people realising that vegan diets can be more sustainable for the future. A plant-based diet could help reduce the amount of landfill used in agriculture and minimise greenhouse gas emissions by nearly half!

A plant-based diet isn’t just fruit and vegetables (although amazing things can be done with just that), with plant-based options growing by the day. Restaurants are creating innovative ways to allow people to lose the animal products and increase the flavour to ensure no one misses out on great tasting food!

Over the last few years more and more restaurants have introduced vegan menus and there are some great plant-based eateries around Cheshire. Chester was even awarded 2nd place for vegan eating out of 20 cities around the UK just behind Edinburgh. So why not use the new year to try out a plant-based diet; made all the easier with what’s on offer in Chester & Cheshire!

Shrub is a plant-based eatery offering food, coffee, cocktails and more, located on The Rows in the heart of Chester. The entirely vegan restaurant has an abundance of high-quality delicious dishes from mushroom calamari and poké bowls to seitan burgers and laksa. And of course, not forgetting dessert! Brownies, cheesecakes, tarts and sorbets a sweet tooth heaven! As well as all this Shrub want to positively impact the hospitality sector by raising awareness around sustainability. Shrub is on target to make the entire business climate positive by reducing their carbon output and making small changes such as zero waste drinks.

The creative tasting menus at Hypha change with the seasons to match the environment and all ingredients are grown in or around Chester. The restaurant even grows their own produce meaning their carbon footprint is massively reduced aswell as their waste as they only grow what they need. In 2021 Hypha was awarded the Green Michelin Star which has only been awarded to 23 restaurants in the UK, this award highlights the work the restaurant has done within their sustainable practices to further improve the hospitality industry.


 

Jaunty Goat

Jaunty Goat does coffee properly. While the coffee alone brings locals and visitors alike through the doors of their two shops, the food is just as special. The second shop, located on Northgate Street is entirely plant-based and is perfect for brunch, light bites and small plates as well as sumptuous bakes. The menu is seasonal, diverse and deceptively simple with dishes ranging from pancakes and acai bowls to full English breakfast and Sri Lankan curry.

They strive for sustainability by making small changes, for example all of their takeaway materials are now made from plants, making them totally compostable and they save and return all of the coffee bags to their coffee supplier and partners, Fire & Flow who reuse their bags or return to the manufacturer to recycle their packaging in-house.

They began their journey travelling up down the UK in street food markets but over the years have been able to open restaurants and stalls in major areas such as Manchester and Warrington. They put a creative twist on familiar junk food dishes like juicy burgers, chicken bites, hotdogs and much more but they make them al 100% vegan and plant based. They aim to be sustainable and save the planet one dish at a time.

If you’re looking for something deliciously sweet Hanky Panky will help with that! Fluffy pancakes and… curry?! Yes, that’s right – Hanky Panky offers a unique and eclectic menu of pancakes alongside sumptuous authentic curries. Hanky Panky has a superb vegan selection. From the pancake side there’s vegan Scotch pancakes with such toppings as bananas and blueberries, peanut butter, bananas and chocolate, and even blueberry compote, lemon sauce and gin! And for curry there’s everything from sweet potato and walnut Villa Vindahlo and vegan Masala Dosa to Kumily cashew curry and mushroom Keema. You can even top it all off with a vegan affogato.
